Beet Salad

Ingredients:

2-3 large fresh cooked beets

2 large dill pickles chopped

3 cloves of garlic minced

1/2 to 1 tsp Salt

1/2 to 3/4 cup of Mayonnaise

To cook the beets.  Trim off the greens leaving about two inches of stems leave the root and do not peal.  Place in a pot covered in water, boil then simmer for approximately 25 minutes or until tender.  Let cool then rub off pealing with fingers.  Grate the beets and pickles into a bowl.  Add minced garlic, salt to taste and mayo.  Mix and chill for 30 minutes.

Yields 4 servings

 

SUMMER SALAD

Ingredients:

2-3 Ripe Tomatoes

2-3 Cucumbers

1 small Onion

¼ cup Fresh Dill

¼ to ½ cup Sunflower Oil

Salt & Pepper to taste

Cut tomatoes into 4ths as thin as possible. Repeat with Cucumbers. Cut onion in half and thinly slice.

Add oil, salt and pepper, then mix well.

 

MARINATED MUSHROOMS

Ingredients:

2-3 lbs of fresh mushrooms, cut in halves or thick sliced

½ cup of white vinegar

½ cup of olive oil

5-6 fresh garlic, sliced

1 T salt

¼ cup fresh dill minced

1/8 tsp of allspice

Wash and cut mushrooms, cover with boiling water and gently boil for 30 mins. Drain all but 1 cup. Add all ingredients including reserve liquid and bring to boil, cooking 5 mins. Cool and refrigerate in glass jar.

 

SALAD OLIVER FANCY

Ingredients:

1 whole chicken breast, cooked chopped

1 ½ lb red potatoes, cooked cubed

1 large dill pickle, chopped

1 cup frozen peas

1 small onion, chopped

1 large carrot, chopped (cooked)

2 eggs hard boiled, chopped

1 T capers (heaping)

1 cup mayonnaise

¼ cup sour cream

1 T dijon mustard

2 tsp lemon juice

2 tsp salt or to taste

¼ tsp pepper

2 T fresh dill, chopped

Garnish:

1egg hard boiled, sliced

1 large tomato cut into wedges

parsley

boston lettuce

1 can black olives ( can slice and add to salad)

paprika

Mix all ingredients, except for garnish, in large bowl. Before serving lay lettuce down top with salad sprinkle with paprika and parsley, neatly arrange tomatoes and olives.

 

 

RUSSIAN POTATO SALAD

Ingredients:

3 large potatoes, cooked peeled diced small

2 carrots, cooked diced small

3 eggs, hard cooked diced small

½ onion, finely diced

2 dill pickles, finely chopped

½ can or frozen peas, drained

¼ lb bologna (hot dogs work best in the States)

½ cup mayonnaise

Mix all ingredients and refrigerate.

 

 

CRAB CORN SALAD

Ingredients:

1 package of crab sticks, chopped

4-5 eggs, hard boiled and chopped

1 small can corn, drained

1cup rice cooked or 1 cup finely chopped chines cabbage

1 T dill or parsley, chopped

1 T onion, finely chopped

dash cayenne pepper

salt to taste

(opt) 1 tsp horseradish

½ cup mayonnaise

Mix all and refrigerate for 1 hour.
